The mondé thyme comes from the thyme of Provence, a perennial herbaceous plant of the family Lamiaceae. Known under the scientific name Thymus vulgaris L, the thyme de Provence is native to Western and Northern Europe, especially the Mediterranean basin. It is recognized for its persistent, fragrant, grey-green leaves and white or purple pink flowers. Very popular as an aromatic plant in the kitchen, the thyme of Provence is also very popular in herbal medicine. These plant and flower tops are mainly used in these areas. It is said that the thyme is "wounded" when it is cleaned and perfectly rid of any impurity.
